Seeds, glorious seeds! A couple of years ago I attended a holistic health retreat where organic plant based & raw foods were served for lunch. It was AMAZING, & I was in heaven. I remember these large thin crunchy homemade crackers full of chia & flax seeds. They were completely divine. Of course, I meant to find out who brought them, but the day got away with me, & I forgot. Darn it. :(
So in my 2+ year long search for the perfect seed cracker recipe, and after none of the ones I'd tried really fitting my criteria, I started experimenting. It took a little work, taste testing, re-doing, & patience, but I finally created my own!
Chia seeds are SO fun to eat. Call me crazy, but they are... I put them in practically everything including drinks, vegetables, gravy, sauces/dressings, fruit salads, pasta dishes, pancakes, cookies, granola bars, smoothies, homemade ice cream, etc.
I've even made "Chia eggs" out of them. They make a great egg substitute in most recipes. So does ground flax seed.
BONUS: Chia / Flax "Egg" Recipe:
Mix 1 Tb. Chia seeds (or ground flax) & 3 Tb. water, & let sit for 5 mins.
Voila! Instant plant based egg substitute.

So my requirements for a good cracker are fairly simple.
#1 - Must be crunchy, at least around the edges. All the way through is best, but I can live if the very center is still just a tiny bit soft. Must be mostly crunchy though.
#2 - Must be healthy. Of course. No white flour, white salt, refined sweeteners, etc. Simple ingredients only.
#3 - Must taste good. In other words, they must actually have flavor & not be like soooooo many "BLEGH" healthy crackers out there.
#4 - Must be adjustable/customizable, if it's a recipe. I like to change up flavors sometimes, so it can't be one of those "follow the directions exactly, or it will fail" recipes.
That's all. Four easy things. And these crackers fit the bill. Yay! YES, feel free to change up ingredients if you would like. Substitute with other seeds. Use different kinds of herbs & spices. Lessen this & add more of that. Maybe even finely grated fresh or dehydrated vegetables or Parmesan cheese. Even though I think these are fairly perfect the way they are, I hereby give you permission to perfect them just for you.
Whole Food - Plant Based - Seed Crackers:
1 c. Chia seeds
1/2 c. flax seeds (whole or ground)
1/2 c. sesame seeds
1 c. water
1 tsp. Braggs liquid aminos or organic soy sauce
1 1/2 tsp. 'Wizard' brand vegan Worchestershire sauce
1/4 - 1/2 tsp. garlic powder
1/4 - 1/2 tsp. onion powder
1 tsp. nutritional yeast
1/2= tsp. Pink Himalayan salt (or other un-refined salt)
1 tsp. No salt herb/spice mix (My favorite is Costco/Kirkland brand 21 spice organic)
Combine all ingredients & mix well in a bowl. Let sit for about 10 minutes. Taste the mixture to make sure you like it. Adjust as needed, IF needed... (There are no animal food ingredients, so it's fine to taste raw.)
Lay a piece of parchment paper across a baking pan. (Tip: Use an air-bake insulated pan OR double up 2 baking pans. This allows for some air to circulate between the pans & makes for a thicker barrier between the crackers & the baking racks, which helps prevent burning. I just stacked 2 jelly roll pans & put Parchment paper on top.)
Spread the seed mixture onto the Parchment paper with the back of a spoon until it's about 1/8" thick. You may need to use 2 pans, depending on their size. The thinner the better!
Bake at 325 degrees for 30 minutes. Remove, slice into 1"-2" squares or strips, & carefully flip them onto the other side with a spatula. (I'm able to flip about 4 crackers at at time.)
Bake for another 20-30 minutes, depending on your oven. (Don't let the edges burn. You can spread the center of the crackers thinner than the edges too. Convection ovens also help with this issue. If they do burn a bit, just slice or break them off when they're done baking.)
Cool completely & let sit in the air for a while to get crispy. They're ok to eat right out of the oven, but the longer they sit, the more crispy & flaky they become.
